With sharp knife cut flat piece off top of grapefruit (yellow or pink), cutting barely into flesh. With an up and down motion, pare grapefruit as you would an apple, going round and round, cutting into the fruit and cutting away the outer membrane. Cut down on both sides of membranes to extract grapefruit sections that are free of membrane set aside. Cut avocados in half, remove stone and peel. Cut into wedges the size of grapefruit sections. On individual beds of salad greens, arrange alternate sections of grapefruit and avocado so that a striped effect is reached. Serve with commercial Catalina dressing, or prepared Catalina Dressing or Celery Seed Dressing (recipes in this cookbook).

Pomegranate Salad: Make Avocado Grapefruit Salad. Sprinkle generously with pomegranate seeds. This is good to serve at Christmastime.
