Peach Crepe

1/2 cup drained peach half
1/3 cup lowfat cottage cheese
1 teaspoon confectioners' sugar
1 9" refridgerated prepared crepe
1 1/2 teaspoons apricot preserves


1. In small food processor, mixer or blender, combine peaches, cottage cheese and confectioners' sugar process until smooth.
2. Brush crepe with fruit spread. Spread peach mixture to within 1" of edge of crepe fold or roll crepe to enclose filling.
