Stuffed Mushrooms Mixture: Pork and Crabmeat

Ingredients

1/4 pound lean pork
1/4 pound crab meat
1 stalk scallion
1 tablespoon soy sauce
1 teaspoon cornstarch
1 teaspoon peanut oil
1/2 teaspoon salt
1 egg white, optional

Directions:

Mince or grind together pork crabmeat, picked over and flaked and scallion stalk. Blend well with soy sauce, cornstarch, peanut oil, and salt. (You may also, if you wish, fold in egg white, beaten until fluffy but not stiff.)
