3/4 pound fish (sole, haddock, flounder or pike)
1 stalk scallions
1 tablespoon soy sauce
1 teaspoon cornstarch
1 teaspoon peanut oil
1/2 teaspoon salt
1 egg white, optional
Mince raw fish; and scallion stalk. Blend well with soy sauce, cornstarch, peanut oil, and salt. (You may also, if you wish, fold in egg white, beaten until fluffy but not stiff.)
