Quick Apple Pancake

This recipe, a microwave winner, can also be prepared in a conventional oven. It makes a great dessert when topped with ice cream.


   1/4 cup margarine or butter
   1 1/2 cups thinly sliced, peeled apples
   1/2 cup sugar
   1/2 teaspoon cinnamon
   1/4 teaspoon nutmeg
   
   BATTER
   1 cup complete or buttermilk pancake, waffle mix
   1/2 teaspoon cinnamon
   1/4 teaspoon nutmeg
   3/4 cup water
   1 teaspoon vanilla extract
   
   TOPPING
   1 tablespoon sugar
   1/4 teaspoon cinnamon


MICROWAVE DIRECTIONS: In 9-inch microwave-safe pie pan or round cake pan, microwave margarine on HIGH for 30 to 45 seconds or until margarine is melted. Stir in apples, 1/2 cup sugar, 1/2 teaspoon cinnamon and 1/4 teaspoon nutmeg. Cover; microwave on HIGH for 3 to 4 minutes or until apples are tender.

In medium bowl, combine all batter ingredients; blend well. Pour evenly over cooked apples. In small bowl, combine all topping ingredients; sprinkle over batter. Microwave on HIGH for 3 to 5 minutes or until toothpick inserted 1 1/2 to 2 inches from edge comes out clean. Let stand 5 minutes on flat surface. Invert onto serving plate.

CONVENTIONAL DIRECTIONS: Heat oven to 350°F. In 9-inch pie pan or round cake pan, melt margarine in oven. Stir in apples, 1/2 cup sugar, 1/2 teaspoon cinnamon and 1/4 teaspoon nutmeg. Bake at 350° F. for 10 minutes.

In medium bowl, combine all batter ingredients; blend well. Pour evenly over cooked apples. In small bowl, combine topping ingredients; sprinkle over batter. Bake an additional 15 to 20 minutes or until toothpick inserted in center comes out clean. Let stand 2 minutes. Invert onto serving plate. To serve, cut into wedges; top with cheese slice or ice cream, if desired.
