Liz’s Hearty Beef Stew

1 pound stew beef, cubed
1 tablespoon all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
2 (14-ounce) cans Italian-seasoned diced tomatoes
1/2 cup red wine or low-sodium beef broth
2 cups low-sodium beef broth
1/2 cup water
3 cloves garlic, minced
1 onion, chopped
1 (9-ounce) package frozen green beans, thawed
1 (9-ounce) package refrigerated fettuccine pasta, uncooked and cut in half


In a plastic zipping bag, toss beef cubes with flour, salt, and pepper; place beef in a slow cooker. Add remaining ingredients except beans and pasta; stir well. Cover and cook on low setting for 9 to 10 hours, until beef is tender. Shortly before serving time, increase heat to high setting. Stir in beans and pasta. Cover and cook on high setting for 8 to 12 minutes longer, until pasta is tender.

Tip: The ultimate comfort a scoop of mashed potatoes in the center of a soup bowl, then ladle hearty stew all around.
