4 potatoes julienned
1/2 pound baby carrots
1/3 cup red onions chopped
2 tablespoons butter
1/2 teaspoon salt optional
1/8 teaspoon black pepper
1/2 cup parmesan cheese grated
Divide the potatoes, carrots and onion equally between four pieces of heavy-duty aluminum foil. Top with butter and sprinkle with salt and pepper. Seal tightly in foil. Grill, covered, over medium coals for 20-30 minutes or until potatoes are tender. Remove from grill. Open foil and sprinkle with cheese. Reseal foil for 5 minutes or until the cheese melts.
