8 chicken pieces
2 tablespoons salt
1/4 teaspoon pepper
1 large onion, chopped
1 large carrot, chopped
2 tablespoons green peppers, chopped
1/4 cup butter or margarine
1/4 cup flour
1 teaspoon salt
2 cups chicken broth
1 egg yolk
Pimiento
Hot noodles, rice or toast
Cook chicken, salt, pepper, onion, and carrot together until chicken is tender. Remove chicken; cut meat from bones; reserve broth. Sauté green pepper with butter in skillet. Stir in flour and salt. Gradually add reserved chicken broth and stir until thickened. Beat egg; add small amount of hot mixture then add to skillet. Add pimientos. Serve over hot noodles, rice or toast.
