1 (7-ounce) package macaroni shells (2 cups)
1 tablespoon margarine
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon ground mustard
1/8 teaspoon pepper
1 cup fat-free (skim) milk
1 cup shredded reduced-fat cheddar cheese, shredded (4 ounces)
2 tablespoons chopped red bell peppers
1 medium green onions, sliced (1 tablespoon)

1. Cook and drain macaroni as directed on package. While macaroni is cooking, melt margarine in 3-quart nonstick saucepan over low heat. Stir in flour, salt, mustard and
pepper. Cook over low heat, stirring constantly, until margarine is absorbed; remove from heat.
2. Gradually stir milk into flour mixture. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in cheese until melted.
3. Stir macaroni, bell pepper and onion into sauce. Cook, stirring constantly, until hot.
