Cheesecake Bars

Ingredients

1/3 cup butter
1/3 cup
1 cup almond flour
1/2 cup walnuts, finely chopped
1/4 cup splenda
1 (8-ounce) package cream cheese
1 egg
2 tablespoons heavy cream
1 tablespoon lemon juice
1/2 teaspoon vanilla extract

Directions:

1. Cream butter with brown sugar in a small bowl. Add almond flour and walnuts. Blend together. Mixture will be crumbly. Reserve 1 cup of the above mixture for topping.

2. Press remaining mixture into the bottom of an 8 x 8-inch baking pan. Bake at 350° F for 12 - 15 minutes or until lightly browned.

3. Blend splenda with cream cheese until smooth. Add egg, cream, lemon juice and vanilla. Beat well. Spread over baked crust and sprinkle with reserved topping.

4. Bake for 15 minutes and cool completely.

5. Cut into 2-inch squares.
