Tomato And Guacamole Towers

Ingredients

2 ripe red tomatoes, cored, ends removed, and cut into 8 slices each
1 ripe yellow tomato, cored and cut into 8 slices
Kosher salt and coarsely ground black pepper to taste
1 cup White Guacamole
8 ounces refridgerated prepared avocado guacamole (1 cup)
2 tablespoons extra-virgin olive oil
8 large basil leaves, thinkly sliced

Directions:

Season the tomatoes with salt and pepper.

For each portion, layer a red tomato slice, 2 tablespoons white guacamole, a slice of yellow tomato, 2 tablespoons avocado guacamole, and another slice of red tomato in a stack on a small plate. Season with more salt and pepper, and top with some of the olive oil and a small pile of basil. Serve immediately.
