Nachos Negros

Ingredients

1 (10-ounce) bag blue corn tortilla chip
1 (15-ounce) can black beans, drained and rinsed
2 canned chipotle green chili peppers en adobo, seeded, stemmed, and chopped
6 ounces port wine Cheddar cheese, or porter Cheddar cheese, shredded
1 cup salsa, any heat level
2 tablespoons chopped cilantro

Directions:

Place half of the tortilla chips on a large, microwavable platter in an even layer. Scatter half of the beans, all of the chipotle peppers, and one third of the cheese over the top. Mound the remaining chips in the center, and top with the remaining black beans and cheese. Cook in a microwave at full power until the cheese melts, about 3 minutes. Top with the salsa and cilantro. Serve immediately.
