Winning Grilled Cheese

Ingredients

1/2 stick butter, softened, divided
8 slices white-wheat bread
1 (1-pound) block sharp Cheddar cheese, sliced
black pepper to taste

Directions:

Spread half the butter on 8 slices of bread. Place 3 or 4 cheese slices on 4 bread slices and sprinkle with black pepper. Top with remaining bread slices, buttered side down. Coat griddle with 1/2 remaining butter. Place sandwiches on griddle on medium-high heat. Use sandwich press, if available; otherwise, press sandwiches down with spatula. Toast till cheese is melted and bread is lightly browned. Remove and coat griddle with remaining butter. Turn sandwiches over onto griddle and press down. Toast until lightly browned.
