Corned Beef and Cabbage Sandwiches

Ingredients

1 1/2 cups finely shredded cabbage
6 tablespoons butter, softened
3 tablespoons honey mustard
12 large slices rye bread
10 ounces corned beef, thinly sliced
3 tablespoons mayonnaise
1 tablespoon horseradish
6 ounces Swiss cheese, thinly sliced

Directions:

Boil cabbage in lightly salted water 2 minutes only; drain in colander. Mix butter and mustard; spread on one side of bread slices. Divide corned beef on each slice. Mix mayonnaise, horseradish, and cabbage, and spoon onto corned beef. Top with cheese slices, then remaining bread. If desired, grill on griddle with press, turning once.
