Avo-Cosmic Sandwich

Ingredients

3 tablespoons butter, softened
1/4 teaspoon garlic powder
1/4 teaspoon dried parsley
2 slices sourdough bread
1/4 cup Thousand Island dressing
1/2 avocado, peeled, pitted, mashed
3 thin slices lean roast beef or turkey breast, warmed (or crisp bacon strips)
3 tablespoons grated Jack or Cheddar cheese

Directions:

Heat flat griddle. Mix butter, garlic powder, and parsley; spread on outside pieces of bread. Spread dressing on inside of one slice and avocado on the other. Place roast beef on avocado side and top with cheese. Place dressing side of bread on top of meat, and grill on both sides until cheese melts and bread browns.

Editor's Extra:
Can use French, Italian, baguettes, or any kind of good crusty bakery bread.
