Western Cheese Corn Soup

Ingredients

1 cup chicken broth
1 (16-ounce) package frozen whole-kernel corn, thawed, divided
2 tablespoons butter
1 (4-ounce) can diced green chiles
1 teaspoon taco seasoning
1 teaspoon minced garlic
2 cups milk
1 cup chopped cooked chicken
1 (14 1/2-ounce) can diced tomatoes
1 cup shredded Monterey Jack cheese

Directions:

Purée broth with half the corn in blender. In a large saucepan, combine purée, butter, remaining corn, chiles, seasoning, and garlic. Bring to a boil; reduce heat. Simmer, uncovered, 10 minutes. Stir in milk, chicken, and tomatoes; heat through. Remove saucepan from heat. Stir in cheese until melted.
