Easy Cheesy Veggie Soup

Ingredients

4 teaspoons chicken bouillon granules
parsley and pepper to taste
1 quart water
1 (10 3/4-ounce) can cream of chicken soup
1 (10 3/4-ounce) can cream of mushroom soup
2 - 3 small potatoes, peeled, cubed
1 (4-ounce) can mushroom pieces, drained
1 (14-ounce) package frozen mirepoix blend (chopped onions, celery, carrots)
1 (16-ounce) bag frozen soup vegetables
1 pound Velveeta, cubed

Directions:

Combine bouillon, parsley, pepper, and water in large soup pot. Add soups and stir till smooth. Add potatoes and mushrooms and continue cooking till potatoes begin to soften. Add frozen vegetables and cook till done. Add Velveeta; stir until melted.
