Greens, Beans, Carrots, and Things Soup

Ingredients

1 1/2 cups chopped onions
2 teaspoons minced garlic
1/2 pound tiny carrots
2 tablespoons oil
1 1/2 cups sliced mushrooms
6 cups water or vegetable broth
1/3 cup barley
1 (16-ounce) can Great Northern beans, drained, rinsed
2 bay leaves
1 teaspoon sugar
1 teaspoon dried thyme
7 cups collard greens, washed, stemmed, chopped
1 tablespoon white wine vinegar
1/4 teaspoon hot pepper sauce

Directions:

Cook onions, garlic, and carrots in oil in dutch oven over medium heat, stirring, 3 minutes. Add mushrooms; cook and stir 5 minutes or till tender.

Add broth, barley, beans, bay leaves, sugar, and thyme. Bring to a boil over high heat. Reduce heat, cover and simmer 5 minutes. Add greens; simmer 10 minutes. Remove bay leaves. Stir in vinegar and pepper sauce. Add salt and pepper, if desired.
