Quick & Thick Tomato Soup

Ingredients

2 tablespoons margarine or butter
1/2 cup chopped onion
1/2 cup instant loaded baked potato (or any flavor)
2 (14 1/2-ounce) cans diced tomatoes with roasted garlic
3 cups milk
2 teaspoons Greek seasoning

Directions:

In large saucepan, melt margarine over medium heat. Add onion; cook 1–2 minutes until onion is tender-crisp. Add remaining ingredients; cook uncovered 8–10 minutes or until thoroughly heated and flavors are blended, stirring frequently. Do not BoIl. Serve immediately.
