The low-fat versions of ice cream and whipped cream make this recipe healthy and delicious!
2 cups fresh strawberries, hulled
1 cup low-fat vanilla ice cream
1 tablespoon orange marmalade
1 teaspoon rum extract
1/2 cup low-calorie fat-free whipped cream (see recipe)
1. Divide strawberries evenly between 4 serving dishes and refrigerate.
2. Just before serving, fold ice cream, orange marmalade, rum extract, and whipped cream together in a medium bowl. Spoon evenly over chilled strawberries and serve.
