Quick Manhattan Clam Chowder

Ingredients

3 medium carrots, peeled and chopped coarsely
3 large white or russet potatoes, peeled and chopped coarsely
4 stalks celery, chopped coarsely
2 1/2 cups minced clams, drained
2 cups canned tomatoes, slightly crushed
1 tablespoon imitation bacon bits, (optional)
1/2 teaspoon dried thyme or 1 tsp minced fresh thyme
dash salt and pepper

Directions:

Add all the ingredients to a large soup pot. Cover and let simmer for 1 to 2 hours. Serve hot.
