Quick Manhattan Clam Chowder

Serves: 8

Serving size: about 1 cup

Try serving this chunky chowder with hot sourdough bread.


   3 medium carrots, peeled and chopped coarsely
   3 large white or russet potatoes, peeled and chopped coarsely
   4 stalks celery, chopped coarsely
   2-1/2 cups minced clams, drained
   2 cups canned tomatoes, slightly crushed
   1 tablespoon imitation bacon bits, (optional)
   1/2 teaspoon dried thyme or 1 tsp minced fresh thyme
   1 teaspoon (dash) salt and pepper


Add all the ingredients to a large soup pot. Cover and let simmer for 1 to 2 hours. Serve hot.
