Chicken Stew With Noodles

Ingredients

1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 pound boneless, skinless chicken breast half, cubed
2 tablespoons flour
3 cups low-sodium chicken broth
1 cup dry white wine
1 tablespoon chopped fresh thyme (or 1 tsp. dried)
1/2 cup minced parsley
1 pound cooked noodles, hot

Directions:

1. In a large saucepan, sauté the onion and garlic in the oil for about 5 minutes. Add the chicken cubes and sauté until chicken is cooked (about 10 minutes).

2. Sprinkle the flour over the chicken. Add the chicken broth, wine, and thyme. Bring to a boil, then lower the heat, and simmer for 30 minutes.

3. Toss together the noodles and the parsley. Pour the stew over the noodles and serve.
