This salad gets all its flavor from spices and apple juice instead of high-fat mayonnaise.
4 cups shredded cabbage (green or purple or a mixture)
2 cups shredded carrots
3/4 cup sliced scallion
3/4 cup unsweetened apple juice
2/3 cup cider vinegar
1-1/2 teaspoons paprika
1 teaspoon mustard seeds
1/2 teaspoon garlic powder
1/2 teaspoon celery seed
Fresh ground pepper
1 tablespoon dry mustard
1. Combine the cabbage, carrots, and scallions.
2. Combine the remaining ingredients in a blender and pour over the cabbage mixture. Toss to coat. Refrigerate overnight and serve chilled.
