3 cups cooked black beans
2 tomatoes, chopped
2 red bell peppers, finely chopped
1 cup yellow corn
3 cloves garlic, minced
1 jalapeño pepper, minced
1/4 cup fresh lime juice
2 tablespoons red wine vinegar
1 tablespoon cumin
1 tablespoon olive oil
2 tablespoons chopped fresh cilantro (optional)
Combine all ingredients and let the bowl sit in the refrigerator for several hours to blend the flavors. Serve.
