No-Knead Oatmeal Yeast Bread

Ingredients

1 1/4 cups water
3/4 cup rolled oats
1/4 cup reduced-calorie margarine
1/4 cup molasses or honey
1 teaspoon salt (optional)
1 package active dry yeast
1/4 cup warm water
1 egg white or 1/2 Tbsp. dried egg white plus 1 1/2 Tbsp. water
2 3/4 to 3 cups unsifted flour
2 tablespoons cornflakes crumbs

Directions:

1. Pour 1/3 cup water into 2-quart glass bowl. Microwave on HIGH, 3 1/2 to 4 minutes or until boiling. Stir in oats, margarine, molasses and salt. Cool to lukewarm.

2. Combine yeast with 1/4 cup warm water. Let stand a few minutes to soften yeast.

3. Add 1 cup flour and egg white to warm oatmeal mixture beat well. Stir in softened yeast. Gradually stir in remaining flour to form a stiff batter. Cover loosely with plastic wrap.

4. Microwave on WARM (10% power) 4 to 6 minutes or until mixture feels warm but not hot, rotating the dish once. Let stand 15 to 20 minutes.

5. Microwave on WARM (10% power) 3 to 5 minutes or until mixture feels warm but not hot, rotating the dish once. Let stand 15 to 20 minutes or until dough is doubled in size.

6. Stir down batter. Coat a 2-quart glass casserole with nonstick vegetable cooking spray. Sprinkle with cornflake crumbs, coating the bottom and sides of dish. Turn batter into casserole sprinkle surface with crumbs.

7. Microwave on WARM (10% power), uncovered, 6 to 8 minutes or until mixture feels warm but not hot, rotating dish once, Let stand 15 to 20 minutes or until doubled (at top of dish).

8. Cover with paper towel. Microwave on MEDIUM (50% power) 10 to 11 minutes or until surface springs back when touched lightly, rotating dish once. Cool 5 minutes turn out of dish. Cool completely.

9. Cut loaf into 20 slices.
