Whole-Wheat And Fruit Bread Or Muffins

Ingredients

1/2 cup raisins
1/4 cup frozen apple juice concentrate
1/4 cup egg substitute
1/4 cup corn oil
1 ripe banana, sliced
1 teaspoon vanilla extract
1 cup whole wheat flour
2 teaspoons cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt (optional)
1/4 cup chopped nuts, optional

Directions:

1. Heat raisins in apple juice for 3 minutes over high heat or 1 minute in the microwave oven.

2. Pour into blender and puree.

3. Add egg substitute, oil, banana, and vanilla and blend.

4. Mix dry ingredients in a bowl and add blender ingredients. Stir lightly.

5. Add nuts if you are using them.

6. Spoon into loaf pan or muffin cups coated with nonstick vegetables cooking spray. Bake at 350°F for 40-50 minutes for a loaf or 20-25 minutes for muffins.

7. After cooking, cut loaf into 12 slices.
