Multigrain Soda Bread


Serves: 24

Ingredients

1 cup flour
1 cup whole wheat flour
1 cup rye flour
1 cup rolled oats
2 tablespoons sugar
1 tablespoon baking powder
1 teaspoon baking soda
1/4 to 1/2 teaspoon salt (optional)
3 tablespoons margarine
3/4 cup raisins (optional)
1 3/4 cups buttermilk

Directions:

1. Combine dry ingredients

2. Cut in margarine.

3. Add raisins. Stir in buttermilk to make a soft dough.

4. Turn out onto a floured surface and knead about 10 times or until smooth.

5. Place on a baking sheet coated with nonstick vegetable cooking spray. Flatten dough into a circle about 2 1/2 inches thick. Cut a large X about 1/4 inch deep in top. Bake at 350°F for 1 hour or until done.
