Scalloped Lima Beans |

2 tablespoons margarine
1 10 1/2-ounce package frozen lima beans cooked and drained
1 green bell pepper small, chopped
1 onion small, chopped

1 1/2 tablespoons flour
1 1/2 cups milk
Salt and freshly ground pepper to taste
1 cup bread crumbs soft
1 cup sharp cheddar cheese grated

Heat margarine in saucepan; add lima beans, pepper, and onion. Sauté for 5 minutes; remove and set aside. Prepare the following cream sauce in the same saucepan.
Cream Sauce:
*Melt margarine and stir in flour; continue to stir and cook for 3 minutes. Add milk, salt, and pepper to taste; whisk while bringing to boil. Cook, stirring, for 10 to 15 minutes or until thickened.
Add vegetable mixture to cream sauce and adjust seasoning. In a greased 1 1/2 -quart casserole, place 1/3 cup each, crumbs and cheese, followed by vegetable-sauce mixture. Top with remaining cheese and crumbs; bake in a preheated 350° F oven for 30 minutes.
