Scalloped Lima Beans

Ingredients

2 tablespoons margarine
1 (10 1/2-ounce) package frozen lima beans cooked and drained
1 green bell pepper small, chopped
1 onion small, chopped

1 1/2 tablespoons margarine
1 1/2 tablespoons flour
1 1/2 cups milk
Salt and freshly ground pepper to taste
1 cup bread crumbs soft
1 cup sharp cheddar cheese grated

Directions:

Heat margarine in saucepan add lima beans, pepper, and onion. Sauté for 5 minutes remove and set aside. Prepare the following cream sauce in the same saucepan.

Cream Sauce:
*Melt margarine and stir in flour continue to stir and cook for 3 minutes. Add milk, salt, and pepper to taste whisk while bringing to boil. Cook, stirring, for 10 to 15 minutes or until thickened.

Add vegetable mixture to cream sauce and adjust seasoning. In a greased 1 1/2 -quart casserole, place 1/3 cup each, crumbs and cheese, followed by vegetable-sauce mixture. Top with remaining cheese and crumbs bake in a preheated 350° F oven for 30 minutes.
