Polish Potatoes |

3 potatoes large, pared, cooked, and sliced
1 onion chopped
1/4 cup margarine
2 eggs
1 cup sour cream
1/4 cup milk
Salt and freshly ground pepper to taste
1/3 cup bread crumbs soft
1/4 cup parmesan cheese grated

Heat oven to 400° F. Layer sliced potatoes in a greased baking dish. Sauté onion in margarine and add to potatoes. Beat eggs, sour cream, and milk to blend well; add salt and pepper. Pour over potatoes. Combine bread crumbs and cheese. Sprinkle over top. Bake 20 minutes or until top is browned.
