Polish Potatoes

Ingredients

3 potatoes large, pared, cooked, and sliced
1 onion chopped
1/4 cup margarine
2 eggs
1 cup sour cream
1/4 cup milk
Salt and freshly ground pepper to taste
1/3 cup bread crumbs soft
1/4 cup Parmesan cheese grated

Directions:

Heat oven to 400° F. Layer sliced potatoes in a greased baking dish. Sauté onion in margarine and add to potatoes. Beat eggs, sour cream, and milk to blend well add salt and pepper. Pour over potatoes. Combine bread crumbs and cheese. Sprinkle over top. Bake 20 minutes or until top is browned.
