Red Cabbage In Apple Juice |

2 tablespoons margarine
1 onion minced
1 pound red cabbage finely shredded
1 apple large tart, pared, cored, and cubed
1 1/2 cups apple juice
1 tablespoon red wine vinegar
1 bay leaf
1 cloves whole
Salt and freshly ground pepper to taste

Melt margarine in Dutch oven; add onion and sauté until softened. Stir in cabbage, apple, apple juice, vinegar, bay leaf, and clove. Sprinkle lightly with salt and pepper. Bring to boil, cover, and reduce heat; simmer for 1 hour. Remove bay leaf and clove before serving.
Note: Add 3 pounds country pork spareribs or 2 pounds link sausage layered between cabbage and cook to make a whole meal.
