3 tablespoons butter or margarine
2 pounds spinach fresh, rinsed and stemmed
1/2 teaspoon salt
1/8 teaspoon nutmeg ground
Black pepper Freshly ground
1/2 cup onions minced
5 tablespoons butter or margarine
3 tablespoons flour
2 cups milk
1/2 cup swiss cheese shredded (2 oz.)
1 teaspoon salt
1/4 teaspoon black pepper freshly ground
12 eggs hard-cooked, quartered
Preheat oven to 325° F. Grease a 2-quart oblong baking dish. In a large skillet over medium heat melt butter or margarine. Add spinach, salt, nutmeg and pepper to taste. Mix well; cover and simmer for 3 minutes. Remove cover; increase heat to medium-high. Cook and stir until all moisture has evaporated.
In a medium saucepan over medium-high heat sauté onion in butter or margarine until tender. Stir in flour. Cook and stir over medium heat for 1 to 2 minutes. Add milk. Stirring over medium heat, bring to a boil and boil until thickened. Add cheese, salt and pepper. Mix half of the cheese sauce into the spinach mixture; blend well. Pour spinach into baking dish.
Top with eggs. Pour remaining sauce over eggs. Bake for 10 minutes or just until heated through.
