2 tablespoons oil
4 thick pork chops
3 cups dried bread cubes or stuffing mix
1/4 cup butter, melted
1/4 cup chicken broth
2 tablespoons celery, chopped
2 tablespoons onion, chopped
1/4 teaspoon poultry seasoning
1 (10 3/4-ounce) can cream of mushroom soup
1/3 cup water

In a large skillet, heat oil over medium heat; add pork chops and brown on both sides. Transfer to a lightly greased 13"x9" baking pan and set aside. Toss together bread cubes or stuffing, butter, broth, celery and onion in a large bowl. Spoon heaping mounds of bread crumb mixture over pork chops; set aside. Combine soup and water; pour over pork chops. Bake, covered, at 350 degrees for 30 minutes. Uncover and continue to bake for an additional 10 minutes, or until juices run clear.

Tip: Excess moisture can keep meat from browning well…just pat it dry with a paper towel first.
