Slow-Cooker Chicken & Dumplings

Ingredients

1 1/2 pounds boneless, skinless chicken breasts, cubed
2 potatoes, cubed
2 cups baby carrots
2 stalks celery, sliced
2 (10 3/4-ounce) cans cream of chicken soup
1 cup water
1 teaspoon dried thyme
1/4 teaspoon pepper
2 cups biscuit baking mix
2/3 cup milk

Directions:

Place chicken, potatoes, carrots and celery in a slow cooker; set aside. In a medium bowl, combine soup, water, thyme and pepper; pour over chicken mixture. Cover and cook on low setting for 7 to 8 hours, until chicken is done. Mix together baking mix and milk; drop into slow cooker by large spoonfuls. Tilt lid to vent and cook on high setting for 30 minutes, until dumplings are cooked in center.

Tip: Homemade herb dumplings…yum! Just add a teaspoon of snipped fresh parsley, rosemary or thyme to the biscuit mix.
