Stacie's Mom's Lasagna

Ingredients

1 (15-ounce) container ricotta cheese
1 Optional: 1 (10-ounce) package frozen chopped spinach,thawed and well drained
9 lasagna noodles, cooked
1/2 cup grated Parmesan cheese
1 (8-ounce) package shredded mozzarella cheese
1 (8-ounce) package sliced mozzarella cheese

Sauce:
1 cup onion, minced
1 clove garlic, pressed
2 tablespoons olive oil
1 pound ground Italian pork sausage
2 (14 1/2-ounce) cans Italian stewed tomatoes, diced
1 (8-ounce) can tomato sauce
1 (6-ounce) can tomato paste
1/2 cup red wine or tomato juice
2 tablespoons Worcestershire sauce
2 teaspoons salt
1 teaspoon sugar
1 teaspoon dried basil
1 teaspoon dried oregano
2 drops hot pepper sauce

Directions:

Stacie's Mom's Lasagna:
Prepare sauce; set aside. Combine ricotta with spinach, if using. Spoon a thin layer of sauce into an ungreased 13"x9" baking pan. Cover with a layer of lasagna noodles, sauce, ricotta mixture, Parmesan and shredded mozzarella. Repeat layers 2 more times, ending with sauce; top with sliced mozzarella. Cover with aluminum foil; bake at 350 degrees for 45 minutes. Uncover; continue to bake until golden on top. Let stand 15 minutes before slicing.

Sauce:
In a Dutch oven over medium heat, sauté onion and garlic in oil until tender. Add sausage and brown, about 10 minutes. Drain. Stir in remaining ingredients. Cover; simmer over low heat for one hour.
