Salmon Burgers

   Cucumber Sauce (below)
   1 can (14 3/4 ounces) salmon, drained and flaked
   1/2 cup crushed round buttery crackers
   2 tablespoons chopped fresh parsley
   1/2 teaspoon grated lemon peel
   1 tablespoon lemon juice
   2 medium green onions, sliced (2 tablespoons)
   1 egg
   2 tablespoons vegetable oil
   5 english muffins, split and toasted
   Cucumber Sauce:
   1/3 cup finely chopped seeded peeled cucumbers
   1/4 cup plain yogurt
   1/4 cup mayonnaise or salad dressing
   1 teaspoon chopped fresh or 1/4 teaspoon dried tarragon leaves


1. Make Cucumber Sauce. Mix salmon, crackers, parsley, lemon peel, lemon juice, onions and egg. Shape mixture into 5 patties.

2. Heat oil in 10-inch skillet over medium heat. Cook patties in oil 8 to 10 minutes, turning once, until golden brown. Serve patties on muffins with sauce.

Cucumber Sauce: Mix all ingredients.

Salmon contains a vitamin called pantothenic acid, which we don't often hear about. Pantothenic acid helps release energy from carbohydrate-containing foods, plus it helps manufacture certain body hormones.
