Directions:

1. Mix all ingredients except bread.

2. Spread chicken mixture on each of 4 slices bread. Top with remaining bread.

Lighter Chicken Salad Sandwiches: For 9 grams of fat and 270 calories per serving, use fat-free mayonnaise.

Egg Salad Sandwiches: Substitute 6 Hard-Cooked Eggs (page 201), chopped, for the chicken.

Ham Salad Sandwiches: Substitute 1 1/2 cups chopped fully cooked ham for the chicken. Omit salt and pepper. Stir in 1 teaspoon yellow mustard.

Tuna Salad Sandwiches: Substitute 2 cans (6 ounces each) tuna in water, drained, for the chicken. Stir in 1 teaspoon lemon juice.
