4 taco shells
1 avocado ripe small
1/4 teaspoon salt
1/2 pound ground beef
1/4 cup taco sauce
3/4 cup monterey jack cheese shredded (about 3 oz.)
Additional taco sauce
Preheat oven to 250°.
Place taco shells on an ungreased baking sheet. Bake for 10 minutes or until warm.
Meanwhile, peel and chop avocado. Place in a small bowl. Sprinkle with 1/8 teaspoon of the salt. Gently toss. Cover tightly with plastic wrap; set aside.
Crumble ground beef into a medium skillet. Over medium-high heat, cook ground beef for 4 minutes or until no longer pink, stirring occasionally. Spoon off grease (MW). Add 1/4 to 1/3 cup taco sauce and remaining 1/8 teaspoon salt. Decrease heat to medium and cook until heated through.
Spoon one-fourth of the meat mixture into each taco shell. Top with one-fourth of the cheese and avocado. Serve with additional taco sauce if desired.
Serve with taco sauce, sour cream, olives, strawberry ice cream and sugar cookies.
