This is the best Lemon Chicken recipe on the web!!Lemon chicken served over hot rice _ chicken breasts - boneless/skinless ___ cup flour ___ teaspoon salt ___ teaspoon black pepper ___ cup butter ___ cup lemon juice - fresh _ cups white rice cooked (2-4 cups) Cut chicken into 1/2 inch cubes. In a shollow bowl combine flour, salt and pepper. Blend well. Add chicken cubes to coat. In a medium skillet, melt butter over medium-high heat. Add chicken, and brown on all sides until golden, about 8 minutes. Add lemon juice and stir until mixture thickens. Serve immediately over hot cooked rice.
