Lemon chicken served over hot rice
4 chicken breasts - boneless/skinless
1/4 cup flour
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup butter
1/4 cup lemon juice - fresh
4 cups white rice cooked (2-4 cups)
Cut chicken into 1/2 inch cubes. In a shollow bowl combine flour, salt and pepper. Blend well. Add chicken cubes to coat. In a medium skillet, melt butter over medium-high heat. Add chicken, and brown on all sides until golden, about 8 minutes. Add lemon juice and stir until mixture thickens. Serve immediately over hot cooked rice.
