1 slice bread white or whole wheat bread
1 tablespoon water
1 egg
2 tablespoons green onions minced
1/4 teaspoon salt
1/8 teaspoon black pepper
1 15 1/2-ounce can red salmon drained
1 tablespoon butter margarine or vegetable oil
Coarsely tear bread into pieces. Place in a blender container. Cover and blend with on-off bursts until soft crumbs. Transfer to a medium bowl. Sprinkle with water. Add egg, green onions, salt and pepper. Mix with a fork until well blended; set aside.
Remove bones and dark skin from salmon, then flake. Stir salmon into bread mixture, mixing well. Shape into flour 3-inch patties.
In a large skillet over medium heat, heat butter. When hot, add patties. Cook for 2 to 3 minutes or until bottom is browned. Turn over and cook 2 minutes longer or until browned and set. Serve immediately.
Serve with lemon wedges or tartar sauce, creamed potatoes and peas, sliced tomatoes and cucumbers.
