Makes about 1 cup.
1 tablespoon margarine
2 tablespoons finely chopped onions
1/2 clove garlic, crushed
2 cups chopped, fresh spinach
3/4 cup water
1 tablespoon cornstarch
1/8 teaspoon ground ginger
1 tablespoon soy sauce
Melt margarine in skillet over medium heat. Add onion and garlic; sauté about 3 minutes stirring frequently until lightly browned. Add spinach; cook, two minutes or until limp. Mix water, corn starch, ginger, and soy sauce; stir into spinach mixture. Bring to boil over medium heat stirring constantly; boil 1 minute. Recipe may be doubled.
