Spinach-Onion Sauce

Ingredients

1 tablespoon margarine
2 tablespoons finely chopped onions
1/2 clove garlic, crushed
2 cups chopped, fresh spinach
3/4 cup water
1 tablespoon cornstarch
1/8 teaspoon ground ginger
1 tablespoon soy sauce

Directions:

Melt margarine in skillet over medium heat. Add onion and garlic sauté about 3 minutes stirring frequently until lightly browned. Add spinach cook, two minutes or until limp. Mix water, corn starch, ginger, and soy sauce stir into spinach mixture. Bring to boil over medium heat stirring constantly boil 1 minute. Recipe may be doubled.
