Warm Ricotta with Honey |

Makes 2 to 3 servings
The success of this dessert depends on the quality of the ricotta, so buy the freshest available. While part-skimmed-milk ricotta is fine, the fat-free is very grainy and tasteless, so don't use it. If you like, add some fresh fruit, or try raisins and a pinch of cinnamon.
1 cup whole-milk ricotta cheese
2 tablespoons honey
1 Place the ricotta in a small bowl set over a smaller pan of simmering water. Heat until warm, about 10 minutes. Stir well.
2 Scoop the ricotta into serving dishes. Drizzle with the honey. Serve immediately.
