Pork Chops Hawaiian

Ingredients

1 cup soy sauce
1/2 cup water
1/4 cup brown sugar
8 (1-inch) boneless pork chops (trimmed) or boneless loin
2 tablespoons flour
1 teaspoon each, salt and pepper
2 tablespoons vinegar
1/2 cup pineapple syrup
1/2 cup sugar
1/4 cup ketchup
1 small onion, sliced
1 small green pepper
5 slices pineapple, cut in wedges

Directions:

About 6 hours before serving, bring soy sauce, water, and brown sugar to a boil. Cool slightly and pour over meat. Turn every hour for 4 hours. Remove and pat meat dry. Mix flour, salt, and pepper. Coat meat and brown in oiled skillet. Remove to baking dish. Combine vinegar, pineapple syrup (pour the syrup of the canned pineapple and add sugar to make syrup), ketchup, onion, green pepper chunks, and pineapple chunks. Pour over meat. Cover and bake for 1 1/2 hours at 350°. Serve over rice.
