J&J’s Basil Cream Dressing


Serves: 5

Yield: 1 cup

Ingredients

1 clove garlic, minced
2 tablespoons chopped parsley
1/4 cup white wine vinegar
2 tablespoons Dijon style mustard
1 egg
2/3 cup vegetable oil
4 tablespoons fresh minced basil or 3 - 4 tablespoons dried
1 dash of sugar
1 salt and freshly ground pepper to taste

Directions:

Place garlic, parsley, vinegar, mustard, and the egg into the bowl of a food processor. Mix well. With the processor running, add the vegetable oil in a slow, steady stream and process until smooth and thickened.

Stop the machine for a minute to add the basil, sugar, salt, and pepper. Process briefly until blended. Taste and correct the seasonings as need-ed. To serve, spoon over a mixed garden salad and enjoy!

Editor's Extra: Okay to use egg substitute in this recipe. Works just fine.
