Great Lakes German Potato Salad

Ingredients

8 medium-sized potatoes, peeled
3/4 cup chopped onion
8 slices bacon, cut in 1-inch pieces
2 tablespoons flour
1 1/2 teaspoons salt
1/4 teaspoon pepper
4 tablespoons sugar
1 cup water
1/2 cup vinegar

Directions:

Dice potatoes and cook in lightly salted water until tender. Drain and keep warm. While potatoes are cooking, fry bacon until crisp. Remove bacon and discard all but 3 tablespoons of drippings. Add onions and cook until tender, about 5 minutes. Mix together dry ingredients. Add to onions and stir to blend. Add water and vinegar. Bring to a boil until thickened. Pour over hot cooked potatoes. Add bacon and toss gently. May be kept in oven at 200° or in crock pot on low setting.
