Dilled Tomato Soup

Ingredients

2 medium onions, chopped
1 garlic clove, chopped
2 tablespoons margarine
4 large fresh tomatoes, peeled and cubed
1/2 cup water
1 chicken bouillon cube
2 1/2 teaspoons fresh dill, or 3/4 teaspoon dry dill
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup mayonnaise

Directions:

In a 2-quart saucepan over medium heat, sauté onions and garlic in margarine for 3 minutes. Add the next 6 ingredients; cover and simmer for 10 minutes. Remove from heat and cool. Blend half in blender. Mix the second half with mayonnaise. Combine both mixtures. Cover and chill overnight. Soup is good served hot or cold. Garnish with additional dill.
