Ranch Beef Pitas

Ingredients

2 pita bread (8 inches in diameter)
4 cups romaine and leaf lettuce (from 10-ounce bag)
1/2 pound cubed cooked roast beef (1 1/3 cups)
4 roma tomatoes cut lengthwise in half, then sliced
1/2 cup ranch salad dressing
1/4 cup sliced red onion, if desired

Directions:

1. Cut pita breads in half open to form pockets.
2. Toss lettuce, beef, tomatoes and dressing in large bowl. Divide among pita bread halves. Top with onion. Serve immediately, or wrap securely with plastic wrap and refrigerate up to 24 hours to grab 'n go.
