Caesar Salad Wraps

Ingredients

16 small Romaine lettuce leaves
1/4 cup shopped red onion
2 tablespoons shredded Parmesan cheese or Romano cheese
1/4 cup Caesar dressing
4 garden vegetable-flavored flour tortillas (6 or 8 inches in diameter
4 hard-cooked eggs, sliced
2 roma (plum) tomatoes, sliced

Directions:

1. Toss romaine, onion, cheese and dressing. Place romaine mixture evenly down center of each tortilla. Top with eggs and tomatoes.
2. Fold up one end of tortilla about 1 inch over filling fold right
and left sides over folded end, overlapping. Fold remaining end down secure with toothpick if necessary. Serve immediately, or wrap securely with plastic wrap and refrigerate up to 24 hours
to grab 'n go.
