Shrimp Steamer Bowl

Ingredients

1 pound raw unshelled shrimp or 13-oz (2 cups) raw, peeled, and deveined shrimp
4 new potatoes (2-oz each), cut in 8 wedges each
1 1/2 cups frozen corn kernels
1/4 cup reduced-far margarine, melted
1 1/2 teaspoons seafood seasonings
1 medium lemon
black pepper to taste
2 tablespoons chopped fresh parsley

Directions:

1. Peel and devein shrimp, if not already done. Place 2 cups water in a large saucepan, place collapsible steamer basket inside, and bring water to a boil.

2. Carefully place shrimp, potatoes, and corn in basket. Cover tightly and steam 10 minutes or until potatoes are just tender.

3. Meanwhile, in a small bowl, combine margarine and seafood seasoning and set aside.

4. When potatoes are cooked, carefully remove shrimp mixture from steamer basket and place on a shallow serving platter or pasta bowl. Add margarine mixture and toss gently, yet thoroughly, to coat completely. Squeeze fresh lemon over all and sprinkle with black pepper and parsley to serve.
