Cheddary Ham And Rice Casserole

Ingredients

2 cups water
1 cup uncooked brown rice or white rice
1 cup finely chopped yellow onion
1/2 cup finely chopped green bell pepper
1/2 cup frozen green peas, thawed
4 ounces extra lean, reduced-sodium ham, thinly sliced and chopped
1/4 cup chopped fresh parsley
3 ounces shredded reduced-fat Cheddar cheese (3/4 cup)
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
black pepper to taste

Directions:

1. Bring water to a boil in a medium saucepan. Add rice, onion, and bell pepper. Stir, cover, lower heat, and cook for 20 minutes.

2. Remove rice from heat, stir in remaining ingredients, cover, and let stand 3 minutes to allow flavors to develop and cheese to melt.
