1. In a small mixing bowl, combine egg substitute, evaporated milk, and peppers and whisk until smooth. Stir in crab and green pepper and set aside.
2. Heat a 12-inch nonstick skillet over medium heat. Add egg mixture, cover, and cook 10 minutes or until just slightly moist on top.
3. Remove from heat and sprinkle with salt, green onion, and cheese. Cover and let stand 3 minutes to allow cheese to melt and flavors to develop. Cut into 4 wedges and serve.
